First of all, I have to thank the 75,000 people that visited Vanderbilt Wife in 2012. When I started this blog in 2006, I didn’t even really know what a blog WAS. It amazes me that I can have an outlet for writing, sharing, and getting advice … all while getting to interact with YOU, make a VERY VERY small amount of money, and get to work with some fun brands and other bloggers.

Here’s to a very happy 2013 for you all!

I can’t believe December starts tomorrow! I feel really unprepared to do Truth in the Tinsel this year. I may have to fudge along the first three days until I can shop for craft supplies without the kids on Tuesday! Are you doing it or another Advent activity?

(And since when I asked Libbie what Christmas was really about tonight and she said “presents,” I think we better get on with the Advent! Yikes.)

Menu Plan Monday

I had a friend mention in the not-too-distant past that she doesn’t get Menu Plan Monday. I’ve been doing it for such a long time that I barely even think about it anymore.

And really? It’s for me, not you! It’s so I can remember what we’re eating during the week. And if you get some great recipe ideas from the links I share, all the better. I enjoy seeing other people’s menu plans IF they share links to recipes.

That corn relish I made last week turned out awesome! I’m in the process of lacto-fermenting it, so hopefully in a few days I’ll be able to share that recipe with you, with a fermented variation if you want to go there. It freaks me out a wee bit, honestly, but I’m sure it will taste just fine and is SO good for you!

I’m trying to wrap up the summer with simple meals, so here’s what’s on our menu plan for the week.

Breakfasts:

Peaches and Cream Muffins (didn’t make these last week)
cereal, fruit
Giant Breakfast Cookies
Pancake and Sausage Muffins

Lunches:

sandwiches
leftovers
quesadillas
fruit, yogurt, cereal, etc.

Dinners:

Taco Salad
Salmon Patties, apple slices, couscous [I use one can of red salmon, some crackers, and an egg mixed together for my patties.]
Pork Tenderloin with Pan Sauce, roasted baby potatoes, veggie
Turkey Meatball Subs
eggs, pancakes, bacon

Saturday Linky Love 7/14

Oh, friends.

This has been the strangest and most stressful week I have ever known.

My bum back drove me and David from Ohio to Chattanooga, rather painfully. My little girl has been with her Nana and Poppy all week. Mr. V’s grandpa died after being in hospice just overnight.

On Thursday, I was in such a rush of panic, knowing we had to get everything moved on Friday so Mr. V could leave this morning to go to Pittsburgh. We had no idea how David and I were going to get to the Outer Banks for our family vacation and my best friend’s wedding (that I’m IN!) because my back cannot make it through an 11-hour-drive alone.

I prayed feverishly while I was getting a facial Thursday afternoon. (Getting a death call during a Spa Day? Not so fun. I should have left and rescheduled, but I didn’t.) I knew that I could not control this situation and Jesus was going to have to take it over and wow us with His power.

He did.

A last-minute, $140 plane ticket to Norfolk? Fairly incredible.

Having such an outpouring of love from our church and friends that not only is all of our stuff moved, it’s almost all unpacked – and a sweet friend did my dishes, swept, and wiped the counters, too? Enough to make me bawl at His goodness and their love.

So … that has been our week. Today starts our beach trip, so I will be scarce if here at all. Enjoy the blog vacation. Go read a book! Or these posts.

So, it’s been THAT kind of week. I forgot it was Wednesday and that I should go to choir practice until my husband reminded me 15 minutes beforehand. (We live 20 minutes from church and the kids were wearing PJs.) Today I forgot to go to the chiropractor. It must be summer. I have no reference for days!

Recipes I’ve Tried, Vol. 4

In light of yesterday’s very interesting cooking experience, I thought it was high time for another installment in this series!

If you follow me on Facebook, you might have laughed alongside me as I sat scared of the absolutely enormous mass of bread dough rising in my kitchen … and then at this loaf that obviously should have been two loaves.

That bread recipe was Oatmeal Sandwich Bread from Bee’s Knees Recipes. I did everything exactly as written, but ended up having to add quite a bit more flour to get an elastic dough. (Probably 2 cups more.) The recipe said to form 3 loaves, which I did. And it left me with 2 normal loaves and this GINORMOUS loaf. Obviously, I should have made 4 loaves. So if you think one loaf is too big … do as I say, not as I do. Make 4. The bread itself is really yummy, but I wouldn’t classify it as sandwich bread. It’s still too falling-apart for me to make sandwiches with. Maybe I shouldn’t have let it rise so much? Who knows.

Cinnamon Roll Bread in 30 Minutes – I was up early Saturday morning, and decided to knock out breakfast before the kids even woke up. I was thinking about JessieLeigh’s similar Deconstructed Pain au Chocolat, but it felt too decadent to have chocolate for breakfast. This cinnamon roll bread probably has at least as much sugar … but it feels more breakfasty.

It’s rare that I find something every member of my family will eat, but this did the deal! My husband gobbled up about half of it, and the kids both ate their fair share. In all honesty, it was a little sweet for me – I could probably do with about half of the streusel mixture. But Mr. V said it was perfect, so I’d leave the recipe the way it was!

Strawberry Dream Cake – For Mother’s Day, I decided to make myself a strawberry cake. I looked, and most of the recipes I found used strawberry cake mix, or jell-o, or cool whip. Not my favorite things. This recipe is made from scratch, including a VERY cream cheesy frosting. The most difficult part was putting the strawberries through a sieve to separate the liquids and pulp. The liquids are used in the cake batter and the pulp in the frosting. It was delicious! Mr. V didn’t like the frosting; it still tastes very much of cream cheese and is not terribly sweet. So if you’re not a big cream cheese fan, I would cut the amount down to 6-8 ounces. It will still turn out fine.

Lemon Garlic Tuna Burgers – I’ve made these tuna burgers several times. They are SO easy since you use canned tuna, but taste fresh because of the lemon juice and sour cream. Perfect for lunch on an English muffin. My picky toddler will even eat one, so I deem that a great success!

  • Two Days vs. Two Weeks at A Slob Comes Clean – I don’t think many people realize how hard it is to reform a slob-by-nature. I love Nony, and this inspired me to tackle one of our flat-surface-where-we-dump-everything-spaces this afternoon.
  • Cocoon at MYLESTONES – Jo and I are/were in very similar displaced, bad housing situations and discovered one another. Every post she writes speaks to my heart.
  • What’s Your Plan for Tomorrow? at Nesting Place – The Nester is in Tanzania with Compassion, and this post struck me as I thought about our Compassion child, Jerome. His name is on a folder in one of those offices. He’s being taught life skills that will change his family, his future, and his eternity! HOW AWESOME IS THAT?
  • YUM of the week: Lazy Sunday Casserole at Kayotic Kitchen. I NEED SOME.
