Menu Plan Monday

You know when all these menu plans are going to come in handy? In about three weeks, when I have to start cooking for myself again! Eeek! I’m not sure I even remember how to cook dinner every night.

Our dining hall is closed for the summer, so we’ll be right back on the bandwagon with all of you. I think you’ll be seeing a lot of three-meals-a-day, toddler-friendly menu plans here this summer.

But for now, here’s a simple dinner plan for this week’s inspiration.

Sunday: Pan Roasted Chicken with Lemony Potatoes and Green Beans, Strawberry Cake (this is what we are actually having for dinner! Happy Mother’s Day to me.)

Monday: Grandma Pizza, salad, fruit

Tuesday: Baked Sweet-and-Sour Chicken with Fried Rice (I’d cut back on the sugar, probably)

Wednesday: Salmon Burgers with Hoison Sauce, Garlic Sweet Potato Fries

Thursday: Leftovers Night

Friday: Breakfast for Dinner—Bacon Cheddar Scones, eggs to order

Saturday: Korean Beef, brown rice, broccoli

Menu Plan Monday

Welcome to this week’s menu plan! Did you have a happy cooking week? Despite the fact that I rarely have to cook dinner because we eat in the school’s dining hall, I cooked up a STORM last week.

I made: Toddler Thai Noodles, Pasta with Chicken Meatballs (want a recipe? I just made it up as I went along.), French Lemon Yogurt Cake (some were cupcakes), Cake Batter Pudding Cookies, Peanut Butter Blossoms, three meals for one friend (PW lasagna, Islander Pork Roast, Tomato Basil Burgers), one meal for another friend (chicken and cherries, brown rice, strawberry-lemon pie) AND a dinner for us and four of our high-school dorm boys. For that, I made steaks, fried potato slices, carrot souffle, spring greens and berries salad, and Boston cream pie cupcakes.

So yeah, my kitchen got a workout. And just reiterated how much I hate doing dishes.

Menu Plan Monday

Easter is past, we’re ready to move on back to some semblance of normality in our home. (Ha! We don’t do normal here.)

Here are some suggestions for a lovely week of Springtime meals.

Monday: Chicken with Pineapple Rice, sauteed snow peas
Tuesday: Tomato-Basil Burgers, French fries, baby carrots
Wednesday: Chicken Chilaquiles Casserole (use any leftover chicken from Monday, shredded)
Thursday: Cajun Grilled Pork Chops with Creamy Mushroom Pan Sauce, mashed potatoes, five-minute spinach salad
Friday: Homemade Pizza (I use the pizza crust from The Pioneer Woman Cooks cookbook)
Saturday: Leftovers night
Sunday: Grilled Cheese Rolls, tomato soup

Menu Plan Monday

I’m quite proud to say that we followed last week’s menu plan very well! The verdict on new recipes? BIG thumbs up to the Autumn Chopped Salad (David even ate everything except the lettuce, I think, in large quantities); Buffalo Chickpea Burgers I wouldn’t make again, even though they are such a money-saver; and Hamburger Muffins need some tweaking but I think they’re a great idea.

Menu Plan Monday: Three Meals a Day with Two Little Ones

Well, hello and welcome to my probably entirely too overambitious menu plan that I actually might follow this week! It’s Mr. V’s Spring Break, which means our dining hall is closed and it’s back to the kitchen for this wife. I’m excited to try out a few new recipes while reveling in some of our favorites, like the Aussie Meat Pies.

Breakfast: Whole Wheat Baked Donuts

Dinner: Aussie Meat Pies, butternut squash chips, peas

*Smoothie discs are what I call pre-blended smoothies that I freeze in silicone muffin pans. Once frozen, I pop them out and stick them in a freezer bag. When we want a smoothie, we can defrost just one disc (for my 3-year-old) or a couple (for me) without turning on (or having to wash!) the blender again.

Menu Plan Monday with Free Printable

A year ago, I did the exact same thing I am going to do this year: go to Pennsylvania with my sister and my kids for her Spring break. Then when we get back, it will be my husband’s Spring break! Yay! (The joys of a family full of educators.)

I’m reposting this menu plan because it has a great resource: a printable with recipes, a grocery list, and the method for getting four dinners made for the week in just two hours or so! Go for it!

Menu Plan Monday 3/5 to 3/11

I went this whole last week with a near-empty fridge. How pathetic is that? I am a little embarrassed at how many GoGoSqueez packets my kids have gone through since I returned from Blissdom (somewhere in the neighborhood of 14). I suppose it is time to get my act together and go to the grocery store!

Menu Plan Monday

You probably know that I am a big-time fan of Menu Plan Monday. I provided weekly menu plans on my site for a long, long time until we moved on campus at the high school in August.

I really miss doing menu plans. I may have even told my mom I would be more than happy to create some for her.

So I’ve decided that on Mondays I’ll outline a menu plan whether I’m using one that week or not. I’ll probably be using an old one as a guideline. I hope this is helpful and inspiring to you.

And it will help me when I have to start planning meals again this summer!

The End of Menu Plan Monday?

Could it be the end of Menu Plan Mondays at Vanderbilt Wife? Truthfully … I’m not sure.

So here’s what’s happening in our life that’s taking precedence over blogging.

Mr. V and I have hoped and prayed since we found out he got his current job that we would be able to live on campus at the school where he teaches. It is a private school with both boarding and local students, so there are dorms and they have dorm parents.

April and May passed this year, and for the second year we realized we would not be moving onto campus for the fall. We sucked it up and I made plans to paint some of our current rental house, do whatever was needed to make it feel a little more ours.

Two weeks ago, we got word that there “might” be a place for us on campus. It was last Wednesday before we had the affirmation that yes, we would be able to move on for this school year. The school year starts tomorrow, August 22. We were able to start moving in Saturday the 20th.

So, yeah.

Part of the deal of living on-campus and performing dorm parent duties is that our whole family can eat in the dining hall, three meals a day, every day. It blows my mind that I don’t ever have to cook if I don’t want to.

I have a difficult time picturing me being able to get my kids and myself dressed and to the dining hall in time for breakfast. But as for lunch and dinner, I think we’ll eat there most of the time.

It is just such a weird concept to think about not cooking that I can’t quite grasp it. I imagine that I will cook one or two dinners at home a week, but I don’t know. We are simply going to roll with the punches and see how it goes.

I’m thinking that there won’t be a Menu Plan Monday here anymore. And that’s OK. I feel it was mostly for me to keep up with what I needed to cook that week, although it did drive some traffic here.

With the expected lack of cooking, I plan to rev up my baking some. I’ve promised Mr. V that his night of dorm duty each week I will deliver some treat for the students. So perhaps I will feature a weekly “treat” here on VW. I adore baking, but the problem has always been that I like baking more than I should be eating baked goods. It will be great to have teenaged boys I can feed!

We are so excited about this new phase in our life and I can’t wait to share what I can with you.
