I had a friend mention in the not-too-distant past that she doesn’t get Menu Plan Monday. I’ve been doing it for such a long time that I barely even think about it anymore.
And really? It’s for me, not you! It’s so I can remember what we’re eating during the week. And if you get some great recipe ideas from the links I share, all the better. I enjoy seeing other people’s menu plans IF they share links to recipes.
That corn relish I made last week turned out awesome! I’m in the process of lacto-fermenting it, so hopefully in a few days I’ll be able to share that recipe with you, with a fermented variation if you want to go there. It freaks me out a wee bit, honestly, but I’m sure it will taste just fine and is SO good for you!
I’m trying to wrap up the summer with simple meals, so here’s what’s on our menu plan for the week.

Salmon Patties, apple slices, couscous [I use one can of red salmon, some crackers, and an egg mixed together for my patties.]
Pork Tenderloin with Pan Sauce, roasted baby potatoes, veggie
Turkey Meatball Subs
