I’m quite proud to say that we followed last week’s menu plan very well! The verdict on new recipes? BIG thumbs up to the Autumn Chopped Salad (David even ate everything except the lettuce, I think, in large quantities); Buffalo Chickpea Burgers I wouldn’t make again, even though they are such a money-saver; and Hamburger Muffins need some tweaking but I think they’re a great idea.
Monday: Balsamic Chicken and Tortellini, spinach salad with balsamic vinaigrette
Tuesday: Meyer Lemon BBQ Pork Chops, mashed potatoes, scalloped corn
Wednesday: Easy Taco Bake, salad
Thursday: Pan-Roasted Chicken with Lemon-Garlic Green Beans and Red Potatoes
Friday: Pecan-Crusted Trout, wild/white rice mix, roasted broccoli
Saturday: Cajun Shrimp Pizza
