You probably know that I am a big-time fan of Menu Plan Monday. I provided weekly menu plans on my site for a long, long time until we moved on campus at the high school in August.
I really miss doing menu plans. I may have even told my mom I would be more than happy to create some for her.
So I’ve decided that on Mondays I’ll outline a menu plan whether I’m using one that week or not. I’ll probably be using an old one as a guideline. I hope this is helpful and inspiring to you.
And it will help me when I have to start planning meals again this summer!
Monday: Lasagna, green beans, salad
Tuesday: Taco Mac and Cheese
Wednesday: Mom’s Potato Soup, salad
Thursday: leftover lasagna/taco mac
Friday: Pork Chops with Sweet Potatoes [Friday is also Dr. Seuss's birthday! Maybe you'd want to craft a fun dessert or some green eggs and ham? Check out Libbie's Dr. Seuss Birthday Party for ideas.]
Saturday: Mongolian Beef, brown rice, baked egg rolls
Sunday: chocolate chip biscuits for Sunday School, BBQ sandwiches, homefries
