Oy. Don’t you love coming back from a vacation and finding that your fridge has not automatically restocked itself? Last week we were living on love and breakfast foods. Right now we’re running on empty. Looks like a trip to the store this morning for me!
I’m going to do some mega-shopping and hopefully stock the freezer this week with some foods to eat post-baby (or just in these last few weeks as I don’t feel like cooking). I am gathering items to make Apricot Breakfast Bars, Pizza Pockets, Cranberry Vanilla Muffins, Chicken Cobbler Casserole, and Mexican Roundsteak. (A big shout-out to the November Once a Month Mom Menu for most of these.)
As long as things continue as normal with baby (I’ll be 37 weeks on Wednesday), here’s what we will be eating this week.
Monday: Balsamic Chicken and Tortellini, Spinach Salad
Tuesday: Crockpot Scalloped Potatoes and Ham
Wednesday: Broccoli and Cheese Soup
Thursday: Super Sloppy Joes, potato wedges, veggies
Friday: Leftovers for Mr. V and Libbie, I have an event at church
Saturday: Leftovers or Whatever You Can Find!
