I can’t help it. It’s 100 degrees outside every day, and I am still craving comfort food. (And steak. I think Baby would happily eat steak and a big baked potato every day.) I am trying to eat what we have in the freezer, but I couldn’t help but sneak my grandma’s Chicken Parm onto the menu (Once a Month Mom is my first cousin, if you didn’t know).
The highlight of last week was the Creamy Mexican Skillet that I’d wanted to make FOREVER (or since March, when it was published). It was sort of like making homemade Hamburger Helper, an old guilty pleasure that we’ve given up. Despite the kick from the taco sauce (I used that instead of salsa), Libbie gobbled it down, too. The kid loves her some pasta.
Here’s the menu for this coming week.
Monday: Stuffed Buffalo Chicken, Cream Cheese Noodles, broccoli
Tuesday: Ravioli Lasagna, Bread, Grilled Zucchini Spears
Wednesday: Golden Glow Pork Chops (recipe coming), rice, carrots and dip
Thursday: Black Bean and Mango Chicken Salad over lettuce, tortilla chips
Friday: Chicken Parmigiana, spaghetti, salad
