When I asked what you wanted to see this week, I had one request for Chicken Parmigiana. Then I saw that last week, my cousin Tricia shared a recipe for Chicken Parmigiana. Someone else asked about cabbage rolls. When I grilled my mom about the recipe, she gave me some very vague instructions and measurements. I think I’m going to have to actually make them in order to figure out a writeable recipe. Which is good for me (YUM!) but bad because Mr. V won’t eat them. Work party, anyone?
So this week I’ve decided to share one of my favorite recipes from my mother-in-law, Gayle. She is a great cook. This is one of my favorite recipes to take to a potluck (and what I took to our first Sunday School class party–the day after we visited our church for the first time!). Since it’s Memorial Day weekend, I thought this was only appropriate!
I generally love all kinds of broccoli salad, but this one just has the perfect mix of veggie, dressing, cheese, and BACON.
Gayle’s Broccoli Salad
1/2 lb. bacon, fried crisp
1/2 c. cheddar, diced
1 medium onion, diced fine (I like mine very fine. I use a mini-food processor.)
1 head broccoli, 2 cups or more
Drain and crumble bacon. Add cheese and onion. Cut broccoli into bite-size pieces and toss with the rest of the ingredients.
1/2 c. sugar
1 c. mayonnaise
4 tsp. white vinegar
Whisk dressing together; toss with broccoli mix. Refrigerate until ready to serve.
