Party Food


Works-for-Me-Wednesday is all about recipes with five ingredients or less this week. The corn dip was the first one that popped into my head. And unlike the Summer Bow-Ties, I think I can get this one right in one try.

This is my favorite party recipe because it is EASY. I thrive on easy. And it tastes good, even if the look may turn you off a little bit at first. The first time I made it I was concerned at the strange peachy color and worried no one would eat any. They scraped it clean at work.

Mexican Corn Dip
1 can Rotel (I use "milder," because I am a wimp)
1 can yellow corn
1 can white corn
1 block cream cheese (8 oz.)
1 tsp garlic powder

Drain the cans. Plop everything into a small baking dish. I use one of those little bitty crockpots so that I can keep it warm at the party. Either microwave for a couple minutes or bake for 30 minutes at 350 F. Stir all together to combine and voila--corn dip. Serve with tortilla chips. I hope those don't count as an ingredient!

I will admit I am also a big fan of pouring a jar of Harry and David's pepper relish over a block of cream cheese and serving that as dip. It's yummy, and you can't get much easier than that.

My other new favorite take-to-a-party recipe is my friend Jill's Oreo truffles (so I think they're actually Kraft, but she makes them so they are hers).

Oreo Truffles
1 pkg. Oreos
1 pkg. cream cheese (8 oz.)
2 pkgs. Baker's chocolate or other baking chocolate--I've mixed Baker's with Ghiradelli for a little bit deeper flavor.

Turn the Oreos into crumbs, in a food processor or by hand. Mix with the cream cheese until well incorporated. Form into 1-inch balls.

Melt the chocolate, then roll the Oreo balls around in the chocolate until they're completely covered. Set on a baking sheet and stick in the fridge or freezer for 1 hour. Then try not to eat them all.
